1st Pulled Pork

Hey all.....

making my first pulled pork from the bradley recipes.  9lb pulled pork.   Any tips? I figure i was going to smoke 6 hours and continue cooking for another 6 hrs  at 225 (thus 12 hours total).   Pull at FTC at 200 degrees?

You may be off just a little on your timing.

All butts are different, but I think you may be looking

closer to 16 hrs and maybe more.

If you want to eat this Pig tomorrow, you need to get it the Smoker now.

I'd raise the temp to max. (I've cooked butts at 250*).

And you can lower your pull IT to 190*.

Those two things will help shave some time off.

I did an 8 lb pork butt yesterday for a big feast this afternoon.  I put it in figuring on 18 hours to get to 195*F (the temp I like to pull it at) at a chamber temp of 225*F.  The little beggar surprised me and it was done in just 12 hours.  I even lowered the cooking temp to 220*F halfway through when I saw that it was really taking off.

Anyway, allow yourself some leeway on the time because these things tend to vary a lot on how long they take to cook.
