3 lb Beef (substitute wild meat)
5 ts salt
5 ts ground ginger
1 1/2 ts black pepper
5 tb brown sugar
1 ts Cayenne pepper
6 cloves garlic
1 1/2 cups pineapple juice
1 1/2 cups soy sauce

Crush garlic cloves before putting in the marinade.   Mix all ingredients in a blender.   Cut meat into strips approx 1/4 in thick.  Place in marinade and let stand in brine for 10 - 16 hours.
Can be smoked or dried in oven @ 140 degrees.   Takes 10 hrs in oven.

I've never done the oven method but know some who have.   I have done it in a dehydrator which worked well.  If you use a dehydrator my might want to add so liquid smoke.   I like it in a smoker
and hang it from skewers

Caribou

That sounds good  :)

RAF, what kind of wid meat have you done this with?

A kewl twist might be instead of brown sugar....turbinado sugar (natural cane) from Maui.

I've made it with deer meat.   I use whole meat from the hind leg.
