Beef/Pork Snack sticks

I ground up 7lbs of beef and 3 lbs of pork this morning. Got it seasoned with mild and ECA. Stuffing later tonight for a smoke tomorrow in the new BPS retrofitted smoker. Going to hit it with some oak for a few hours  ;D

I will take some pics of the smoker going.

I think you made too much so you better ship some out here.  Especially the ECA.   ;D

I got the sticks ready for the jerky/stick smoker.



Here they are hanging. The BPS generator is starting to smoke.



The temp is going up. This was the only thermometer i had left  ;D



How bout some extra smoke too  ;D

Thats a cold smoke generator.

The sticks are done too. Cooling right now before i cut em up and vac seal em  ;D
