I need some help with my Salmon

I was browsing the forum for a while looking up Smoked Salmon links. I kept reading about Kummoks recipe but I can't seem to find it. Can anyone the link for the recipe?

Also I was wondering if you could tell me which is better

Cold smoking or Hot smoking? I tried smoking salmon once before in a different sort of machine (nothing like the Bradley) and it came out tasting like smoke but not in a good way.  :-XWill that happen if I hot smoke it with the Bradley? ( I have the Bradley Digital 6 rack) Is there a way to regulate the smoke?

Being a newbie is a little annoying to others :) Sorry bout that. but I'm a quick study!!  ;D

Personally I only cold smoke now but that is just a personal preference.

Actually I was browsing that webpage you suggested before I posted this topic. Couldnt find what I needed. Didnt have time to browse every post either.

Was hoping I could get some better feedback this way.

If you follow it exactly as written, you won't regret it...!  It's the best hot smoked salmon I've ever tasted, and I've tasted a lot!  Cold-smoked is a completely different product, and you'd want to follow a different recipe for that....

Welcome to the forum kataquaz.  There are no dumb questions on this site, only questions that need answers.  So feel free to ask all that you need to ask.  This is a great site with many very knowlegdeable and experienced smokers.  

There are only two ways to regulate the smoke in a Bradley.  You have the choice of which wood to use.  Some woods are milder flavored than others.  Mesquite and hickory are two that will give a stronger or more robust smoke flavor.  Alder, maple, and apple are milder flavored smokes.  You can also vary the time of smokes.  On your digital, program in the time - or just put in the amount of pucks you need for the time - 20 mins each puck.  However, there is no reason you can't open the door and push out the puck yourself if you only want, say, 10 mins of smoke.

Cold / Hot smoke.  Usually in hot smoking you are cooking what you are smoking.  In cold smoking you are using a cabinet temperature under 100 deg F so you are not cooking the food.  Because the food is not cooked, the food needs to be cured to be safe, or needs to be cooked after cold smoking.  The food can be just as smokey as you want or not want, by, again varying the time of smoking and the wood flavor selected.    Cold smoking in and of itself, does not give less smoke flavor.  Cold smoking salmon gives you lox, gravlox, nova salmon, etc....

Athens is a great city.  I hope to visit again soon!  Lots of things I still want to do and see.  And we may not have as much of a problem with cabs and getting to the correct airport!

Caneyscud thank you as well for the helpful details. It's my first time using a smoker really so Im sort of stumbling around in the dark.

Athens is ok but Greece has more to offer. I would suggest spending 2-3 days in the city and the rest of your time on the islands. Judging from your taxi-airport problem I'm assuming its been quite a while since your last visit. Good news, there is only 1 airport now. lol so you will have no trouble with that!

Is that "different" because you live in paradise, and I live in....well.... not as bad as some places....but not even some place I could rightly call a hinterland.   ;D ;D ;D ;D  Had 4 games of softball yesterday in 90 degrees and 90% RH.  Not easy on old bones!

"Different" because you're certified and I'm certifiable!!  ;) ;) ;) :D   As far as the "paradise"....right now, one of our main salmon fishing rivers has closed waaaaay early because the salmon don't seem to want to swim upriver in big numbers, to their final resting place....trouble in paradise!  :'(

Oh man, not good news - Low water??  My home trout waters aren't looking real good right now and looking to the future, I'm worried.  All the waters released this year because of repairs to the dam and our wet spring - really scoured the bottom and there is not much insect live right now, and it should be teeming with green stuff and insects.  Also because of the big releases, it has gotten the lake stirred up - too much deep cold water had to be released and the lake temp is up making the river temp be up also.  If the lake temp stays this way for much longer and then we start getting upper 90's, the water temp in the river will soar, and really limit the places trout can live.  I'm almost to the point I don't care anyway.  The river is getting so much use, it is almost not fun going anymore.  First time in almost 30 years of fishing it that is is almost arm to arm in some areas from Friday to Sunday - some relief Mon thru Thurs.  Plus since it has gotten great reviews in the past years coupled with droughts in nearby areas, many guides are coming to our waters.  Used to be rare to see a drift boat, but now you'll see 20+ all with out of state tags on their trailers.  And let's not talk about the floaters.  The other "fishermen" if they can be called that, along with some of the boaters are bad enough, but the "floaters" are some of the rudest, most foul-mouth, dirtiest (as in litter), non-thinking, non-caring animals (I can't rightly call them people) that I have ever seen.  Two weekends ago, there was actually a couple of jetskis pulling wakeboarders in a river full of fishermen, that usually only a flat bottom jonboat can navigate, full of downed trees, and only 50 to 75 feet wide at the widest!!  I can't tell you how many countless times floaters float through the hole I'm fishing when they could just as easily float in back of me, how many times floaters have stopped not 10' in front of me, how many times I have been bumped into with a canoe, a kayak, or some other floating device while fishing.  Even had a guy in a kayak last year that came into my water, started fishing it, going up and down within 15' in front of me several times, and throwing his spinner at my feet.  I'm just glad I don't carry a gun there'd be more for the fish to nibble on if'n I did!

In those situations that are so out of whack, Caneyscud, I'm never sure whether these people are so clueless that they don't even realize there is etiquette involved in  fishing or whether they realize and are just a%&holes and don't care. I can't get over what garbage people chuck in the water all of us are trying to enjoy. I hope the situation (both natural and man made) on your home river improves.The salmon fishing reports around here have been excellent and I am champing at the bit for my summer holidays to start so I can get out on the water. I do have time to go for an evening fish after work but the wind has not been cooperating--30 knots every evening for the past week and a half.

Not THAT many advantages to aging, but one good thing about disappearing hairline is that old farts can look back on things and see that some things have always been there....jerks with guns and fishing rods have always been there. I recall a time back in the 50's that one of the guys in our hunting party was held at gunpoint while two other guys stole his deer...the REALLY disgusting thing about that event is that our friend was confined to a wheelchair, on a stand, while the rest of us were out beating the brush to push some deer his way, when these jerks did the dirty deed. Perhaps the difference back then was what folks did about stuff like that. In our case, our camp searched these guys out, burnt their camp down and sent them home WITHOUT their wheels/guns/camping equipment/etc, but didn't pummel them (much). Nowadays I guess we'd be called the bad guys for demonstrating "intolerance"!!  ::)

You would be called the bad guys around here cause you didn't Pound on them enough!! Especially for stealing a deer from a fella in a wheel chair.
