Mid week tri-fecta: Pork, Chicken & Ribs

Well monday afternoon I did a 15 lb whole sirloin (i posted the pics in ...meats). Tues had to go out of town
and when I got home I smoked/roasted 48 links of Boudain for a friend to take to work on oil rig. Today
(wensday) I wasn't gonna do anything. I looked in the second fridge and seen (from H E B) pre marinated
pork and chicken thigh fajita. Also two pork spare ribs. Its on. I smoked all the pork and chick fajitas for 2 hrs
with mesquite, yes mesquite. It's a texas thing. Then grilled. (charcoal)

Pork spare ribs smoked/grilled
the ribs I smoked for two hrs.then foiled for 3 w/spritz of apple juice then grilled for a crust

left has a mesquite base rub. right has a hickory base rub
They were off the hook.

i use a chimmey start....environmentally green...wish someone made them
out of something other than thin crap...

Looks tasty, wish I had the time to more smokes during the work week.

OU812, I didn't mean to seem like I was braggin. I worked hard physically providing for my family and now
that I have two sons that have matured enough to run things they way I like for them to be run, I guess
I do take advantage of my down time. The way I see it, God didn't tell me how long I have here so I try to
do something I enjoy everyday, be it bad or good.
