Did a little cheese

Cooled off this weekend with no humidity so I said to my self
"self lets do some cheese" What kind ? "a little of everything"
Allright, some Pepper jack, swiss, farmers, monterey jack, mozzerella,medium cheddar, mild cheddar and some colby on the rack ready to go


After 2 hr Alder


The tooth picks were to help me label after the smoke because I had a few of these getting every thing ready

Glad i wrote down what was on each tray

Now comes the waiting game, just put in the bottom of the fridge behind every thing helps keep me from dipping in to soon.

It all looks great OU! Only one thing missing, a second shot glass of JD for me. Might need a few of those while waiting for the cheese to mellow.  :D

Looks great, but I think I still could have picked out the swiss and pepper jack even after a couple JD's.  :)

Hey has anyone tried dipping the cheese in wax as opposed to wrapping it? And I wonder what kind of wax you would use?
I like to walk threw life on the path of least resistance. But sometimes the path needs a good kick in the ass.

HEHEHE. That would be great if I was trying to get drunk, but I mean instead of plastic wrap after you smoked it. Like the swiss do with their cheese. I don't think you could use just paraffin wax as it is a petroleum wax. Mind you my mom use to use it on jams and stuff.

I have not found a wine that doesn't taste like crap yet, JD goes good with every thing.

I have not tried the wax but I would think it would be more work than the bags

Yes and it aint bad, even adds a little smoke to the whiskey

I like JD on the rocks with some cheese and crackers when I'm watching NASCAR
