Smokehouse Snack Sticks

I stuffed 10 lbs of 85/15 chuck. 2 diff flavors in clear collagen casings. Going for smoke tomorrow.

Two different flavors of sticks.





5lb PS Seasoning stuffer with long 7/16" tube, clear collagen case.



5 lbs of one flavor.


5 lbs of the other with a small stick for the jerky pup  ;D



10 lbs total.



Minimal waste of meat. I use a wooden dowel to puch the remainder of the meat out of the tube and into the casing.




Here is the chicken fajita i am going to grind and stuff later today. This is going to get cold smoke being its already cooked.

Bradley, there is only 5 pounds. I normally only use the big smoker for turkeys or big batches of sausage 10# - 60#. I can use it for these but its not necessary. with hunting season around the corner, I'll be firing up the big smoker soon enough.  :)

Way too much for my BS. So into the big boy. Going to get hickory/corn smoke  ;D
Its kinda warm again so they are hanging to dry without heat right now, no aint worried cuz no pork added.

I almost messed em up  :-\  bumped the heat to 160* and went to neighbors, got back and the IT of the sticks were at 154* so i had to think fast and get em cooled off. Guess my next project is a dry, hanging rack.

When the sticks wont be frozen i store them in gallon plastic jugs with holes in the lid.

Looks good Rick. Was kinda afraid the Fajita stixs would get crumbly and fall apart without any added binder in there.

The strips did have some connective fat, maybe it was just enough. Going to do 5 more pounds this weekend.
