Rib Smoke with pics

I was getting a little hungry for some Ribs, so I busted a few racks out and got to work!

Babybacks rubbed the night before and getting ready for a smoke bath!

I thought while the smoker was running, why not a few ABT's.  I busted out my new corer and worked a few Penos over.

Then I said to myself, self how bout a few stuffed shrooms while your at it, so the baby bellas and buttons got ready.

Needless to say everybody looked like a bunch of swelled up road kills in 100 degree heat when they where all done.

I can understand that. Looks great. Did the shrooms take on a lot of smoke? Haven't done them yet.

I'm also curious about the mushrooms..  What did you stuff them with, and how did they turn out?

I smoked the Mushrooms for 1.3 hrs.  They take the smoke really well, but they are easy to over smoke.  The longest I've left them in has been 1.5 hrs. with CT of 220.  I've done several hundred and they always are a big hit with everyone.

As far as what to put in them, I've done a little bit of everything.  This batch here I had a blend of Sweet Italian Sausage and  Country Sausage.  I blend it together Cream Cheese and Shredded Cheddar.  Along with a simple mixture of spices, Garlic Salt, Onion Powder and Cayenne Pepper(just a little).

bcd, When i grill I do the bacon wrapped mushrooms and we love them. I haven't tryed them on the Bradley thinking they may just dry up. Glad you made you post and now I too will give them a whirl. Awesome spread of food. Thanks   CRG

All of that stuff looks really good bcd.  I haven't done baby backs in the OBS yet, just plain ole spare ribs.  The baby backs are pretty expensive when not on sale so I figured I'd practice on the regular ribs first.  They came out good.

We had stuffed mushrooms this past weekend, but in the oven.  A friend works in a deli and sent over about a dozen and a half mushroom caps stuffed with crab meat.  I don't know what else was in there, but they were GOOD.  I'll give the next batch, if I'm lucky enough to get them, a try in the OBS.

Thats some good looking eats you have, or should I say had there.

Those ribs, shrooms and ABT's are making me hungry.

It's ben a wile sense I've done shrooms, I like to mince the stem's and any piece's then add them to the filling along with the spices. Kinda makes your shrooms pop with flavor.
