Garlic and cracked pepper jerky

This is how I do most of my jerky.

Most of the time I don't smoke it.

Start with some eye round:


Trimmed of surface fat:


Cut in half the long way with the grain


Into the freezer for three hours.

After three hours in the freezer, used this:

to make this:

We separate the meat into 3 pound batches, it is easier than trying to tackle 11 pounds at once.
this is the cure we use:

Lay it out, apply cure and pepper to one side:

I use this to apply the pepper:

Flip each piece over, apply cure, pepper and garlic powder to the other side.
Place in a zip-top bag and refrigerate for at least 24 hours, I usually do 48 hours.

FLBR, love the power pepper grinder.  That jerky looks awesome.  Have 9 pounds of ground meat jerky going tomorrow. 

Your slicer looks amazingly just like mine and 10.5, you may get one but not for the price FLBR, me and several others did.  As far as I'm concerned that has been the ultimate score since I've been on this forum. :o ;D 8)

Dang. I love using power tools in my cooking. More details please. And what slicer is that?

The slicer is built by Weston.  They made a bunch for Cabela's and had to recall them because they had a circuit breaker type deal in them that would "pop" at 20 minutes.  They replaced the circuit breaker and sold them online.  If I remember correctly, the 10 inch slicer like I have was $80.00 and the 12 inch was $100.  By the time I got to their website all of the 12 inchers were gone but the 10 inch works just fine.

Like I said earlier, best score since I've been on board except for all the free stuff NePaS has scored lately. :D

I got in on the Slicer deal. It think it was around $100.00 with freight.

The Pepper grinder - I just took the top off, chucked the shaft in and away we go.

It helped that the "mate" to that pepper grinder was no longer in service, so that was an orphan.
