the boys at the shop are having their annual Christmas luncheon grill.    We have been asked to bring a little something and I need to decide what to bring.  I am thinking of pulled pork or a brisket.  This will be my 1st major job in the smoker after trying chicken wings and jerky.  thinking ahead to presentation I think the brisket would look better.  What do you think, what should I do in the smoker?  anything else you might suggest?

Pulled pork, although time consuming, is probably the easiest and most forgiving thing you can do in the smoker. You really have to screw up to not have one of them come out great.

I'd do both.   Whichever one turns out better/prettier, take to the party. (keep the other at home and 'eat your mistakes')

Put the pork butt on the bottom, and the brisket above it.  220*, 4 hours of smoke.   You'll have to run it overnight, so start at like 6PM, dump the water pan/refill before you go to bed.  The butt might be close to 190* first thing in the morning, so keep an eye on it.  The brisket might be done around 10AM to Noon.     You'll have to rely on the IT of the meat, there is no way to really guess how long it will take.  These times are based on a brisket+butt smoke I did a month or so back.  But it was much warmer outside at the time..

Maybe put a rack of MOINK (bacon wrapped meatballs) on the top shelf for a couple hours right before the party...  Those are always crowd pleasers.

I agree with wildcat boston butts are far easier and more forgiving than briskit.

If you just do the Boston butt, you might as well do 2.   Because that first one will disappear quickly..  :D

That's why I usually do 4 butts- I'm feeding six, 2 are Teenagers.
