Discolored Ribs

Last night I cooked three racks of ribs, a butt and a brisket.  I noticed that some of the ribs in some areas were a lighter shade.  Could this be caused by me not rotating the racks?  I must say that this is a wonderful product.  The ribs come out so good that I have started selling them.
