  Hi all
I am doing two 1# pork tenderloins I used Habanero Canadian Bacon-dry rub for 5 day.
then soak then dry it .then put on the Rub.I turn on the DBS at 1130am set the dbs 300* it was 70* out side lite wind.
here are the reading.( the smoke gen was on the hole time) I put in the meat hot water and a warm brick in tin foil at 1:00pm

start time            bradly set point   bradley read   Fluke metter read   maverik read
1200 pm                 300*                 137*               130                    136             maverik prob two
100 pm                   300                   111                 103                    113
200 pm                   320                   126                 120                    120
300 pm                   320                   153                 127                    127          meat inside now is 125*
330 pm                   320                    151                124                    125                                    125*
400 pm                   320                    149                122                    123                                    125*
The smoker should get up to 220* in four Hr right. I dont know what to do with the temp!  Am I doing something worng at this point I have to bring the meat in the house to put it in the oven .I would like to get the meat to 150*or so. It looks to me that the DBS wont get up to the right temp to start with.
I only open the door to put in the meat
Thank for any help

It looks like your heating element was not working, and the only heat provided was from the generator. Open the door, and look at the elements; they should be glowing red. If not make sure the power cord that runs from the cabinet to the generator is securely plugged in. Unplug it form both ends and reconnected them. Do this a few times.

You can also look throught these tips:

Thanks
The element is on but not glowing red just dim red.

Harb your dry-cure was real good.First time doing something other then jerky or snack sticks

classicrockgriller

Ketch22, are you by chance plug into an extention cord?

If not is the plug you are using share by other electonics that are being used at time of smoke.

Sounds like your Bradley is starving for electricity.

 HI
No it was the only thing on that line. After I put up the post and before bring the meat into the house I put the smoker on the Auber dual probe.
then the temp came up .I set the PID at 228 and got the meats IT to 165*. But I still have to look at the wires in the Bradley. The Auber is nice but I am not got with the programing of thing like that.( like VCR's and DVD) I am going to send Bradley a email I hope they can help or know why it wont get up to temp.Do you think the heating element mite be bad I just got the smoker in Feb only used it three times.

classicrockgriller

If you hooked up the PID and got the temps to rise, it doesn't sound like the element.

Sounds like something wasn't pushed in good and tight, like partially plugged in.

Well I am glad you got to finish your smoke.

Ketch22

Hi
I am going to try it again today after I check all the wires. I have pic I just have to learn how to post them

Thanks for all the help

Ketch22

OK I checked all the wires and started the test with no meat just the brick no water and the smoke gen.on. Temp out side was 70*the wind did pick up around 1:00

Start       Bradly st at    Bradley read   Maverick read      fluke read
10:45          300*             67                   67                  67
11:15          300             214                  233                230
11:45          300             234                  243                240
12:15   move set up to 320
1:00            320           241                    253               253
1:15            320           246                    248               248

Now I have to ask this should I be able to raise the temp set point over 320* on the Bradley and
the timer set only go's up to 4hr

classicrockgriller

Ketch, you want stable temps.

The Bradley temp will stabilize over a long period of a cook.

But, it sounds like you MAY have a bad digital.

When you use your PID, it bypasses the digital control.

Try running a test and set your Bradley for a cooking range temp (225*)

and watch your maverick and fluke over that time period.

When you turn on the Bradley you will have to give it about an hour to get everything warm

which is why we all pre-heat our Bradley's.

Thanks classicrockgriller
I will try the test .I Guss I will have it email Bradley about the digital thing I hope they help me with that.

Thanks Again for the help

Ketch, it looks to me like it is all good.

I would still call Bradley on the Digital not being able to advance past 4 hrs.

You also need to learn that PID, that will save you alot of worries.
