brine For Stripe Bass

HI
I have some Stripe Bass I wont to smoke I have a 6 rack Bradley.
I need a good brine and advice on cooking time and temps.Thinking of using oak or apple.
I have about ten # no skin

here is thebrine I used from the site you gave me . The fish came out real good.
I would put up pic but my computer at home isn't working .I am doing this at work


3 cups water
1 cup soy sauce
1/3 cup brown sugar
1/3 cup white sugar
1/3 cup kosher salt
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon pepper

Ketch, I would be interested in hearing the whole process when you have time to post it.

I start by replacing the soy sauce with less sodium soy sauce.
I mix all till the sugar and salt dissolve put in fish then put in the refrigerator over night.
Remove from the refrigerator rinse with water place on paper towels to dry.
Start the 6 rack Bradley set temp at 200 when fish get to room temp put fish in smoker.
set temp at 150 cook for two hr with two Oak and two Cherry after one hr turn racks.
let cool They go real good with a cold beer. ::)

He's WAS on mandatory vacation.

But Wifie just left to go shopping with Son #3.

So the SmokinMonkey is coming out of retirement. ;D
