Pastrami Jerky for Future Use

You guys talked me into this.

Let's get a game plan together.

Flat comes out of soak tomorrow.

I got my corned beef soaking also. Mmmm pastraaaaaami. What is STC's recipe? Is it like UIS's?

Corned beef flat, right CRG?  I would take the flat and slice it 3/8 inch thick.  Mix up the dry pastrami rub from Hab's recipe or STC's recipe and apply it to the strips and overnight it.  Next day proceed with normal jerky drying steps.  Maybe brush the rub from the strips before you begin the drying process.

Someone contribute ideas and suggestions.  This is just a starting point.

Well I just got veto'ed. I am only allowed to make it into pastrami. Damn I gotta find those testicles. I don't know where she put them. :o

He said last time he looked for something there, it took him

all day long to try on all the different undies. ;D

Back to the Pastrami Jerky, I have kinda decided to take the spices and rough crush.

Add some water and simmer the spices.

Let cool and take the sliced corned beef and give everbody a ride in the tumble marinader.

Drain the liquids and add the simmered spices back to the strips. (maybe add some fresh)

What ever falls off, ...... falls off.

A cple hrs or so of smoke and then finish in the dehydrator.

I'm thinkin go easy with the spices after the tumblin, theres allot of serface area there.
