Sunday Afternoon Smoke

Friend, who's party I was at last nite, called and ask if I could smoke him a couple of shoulder roast.

Sure NP.

He brought over 2 Chuck Roast center cut Angus Choice (total of 5.09lbs) and a thicker Select Shoulder roast (3.85 lbs).

Can't let all that smoke go to waste. 3 racks of boudain (hot and reg) 2 racks of bacon wrapped dogs.

Seasoned one with Traeger prime rib rub (I like that stuff except for the coarseness) one with a cajun rub and one

with Salt Lick Rub. Used 3 hrs of Jim Beam, but drinking Canadian. ;D

Looks great CRG.  Wish I could get a closer look at the bacon wrapped dogs. Those sound interesting.

I appreciate your conservation of smoke - Load it up.  Looks good.  

A local market had whole Angus beef tenderloins on sale for $5.99/Lb today.  Sent the wife out to pick up a couple.  Next weekend is her "birthday weekend".  I'll cook something up.

Wasn't gonna turn on the Smoker this weekend, but got ask to.

Did everything while Wifie was nappin and she still doesn't know something is cookin! ;D

He wants them along the same cook as a Brisket.

Not med or med well and not pulled.

I am thinking around a 170 to 180.

Any thoughts on that?

Sounds pretty good I did an armroast to 153 and it still had pink in the center so you should be good there

Ahh dude, that's awsome. I have never had my OBS filled up on all racks.... Good looking stuff. Remind me whewn it's time to come over for the next shin dig.. ;D

Took the bacon wrapped hotdogs off and had one with my homemade roll.

Sweet!

The Boudain in about 30 minutes.

Things are good!

I sent some of this bread starter to OU812 and he made his first loaf of bread today.

He has made rolls out of this starter before, but he wanted loaf bread.

He sounded like a kid with a new toy when I talked to him today!
