A 15# Beef Top Sirloin roast just jumped in my shopping cart

Costco was getting picked over pretty good with the upcoming weekend.  Ended up getting some BB Ribs, couple whole chickens, couple USDA Prime Rib Eyes, and then it happened...

I was looking for maybe a brisket or something beefy, possibly even a prime rib roast.  But somehow I ended up choosing this monstrous Top Sirloin hunk of meat that tops out just at 15 pounds.  I'm thinking I want to slice it.. but then again some shredded beef would be good too.  Those Italian Beef sandwiches have been looking pretty good lately although this would make a LOT of sandwiches.   Obviously with a  family of 5 I'll be freezing some, especially with everything else I plan on doing this weekend.

Any suggestions?  What would you do?

Cut that Bad Boy in half and make two of the things you want.

Good call, I think I'll split that bad boy.  Pull half for slicing and leave half for pulling.  It's going to be a fun weekend!

Used FLBR's simple to follow directions in the link above yesterday, only difference is I used a little Garlic pepper as well as standard S&P.





Sliced nice n thin, probably could have gone a tad thinner but it's pretty damn good.





I chopped up some of the end pieces, added it to some water, few beef bullion cubes, some more salt and pepper and simmer for about an hour to make an au jus.  Just had some sandwiches for lunch and they were excellent.  All we had were hamburger buns but I warmed up a few slices of meat in the au just, added it to the bun and put a slice of mozzarella on top and it was delicious.  Next time we'll have some crusty french rolls and maybe some fried onions and peppers on top.

Going to have to vac seal and freeze some of this.  Kids usually bring ham and cheese sandwiches to school for lunch but I think they'll be bringing roast beef for a while now.

I like rare meat, but my family doesn't so I usually cook to their preference.

That does look mighty nice.

Same here.  That was the great thing about the sandwiches we had today.  Since I heated the slices of meat in the au jus to bring them up to temp I just kept theirs in a bit longer and they darkened up nicely to medium for the wife n kids.  Not sure how it will work with the kids and cold sandwiches yet but the wife even took a piece cold while I was slicing it and she loved it so hopefully it will go over well just the way it is.
