First smoke

Well I've got the pork butts and rubbed them with 2 types of rub, 2 local KC brands.

The first I rubbed with Jack Stack rub and the 2nd I rubbed with gates.

Here are my pics so far.

The two rubs used and the butts I got from sams club weighing in at 17.66 lbs.


Both butts put to sleep for the night in the fridge.


I plan to start smoking between 7 and 8 tomorrow, I'll update the post with more pics as I take them.

If those butts are 8+ pounds each, it will take a very long time to cook (depending on Bradley temp and weather).  I had a 7 pounder go 18 hours.

That is part of the reason I am starting tomorrow. (we aren't eating till monday night.) I plan on smoking before bed, cooking overnight, checking up on it sunday morning and finishing sometime sunday afternoon/evening. Then pulling it and putting it in a crock pot to reheat for dinner monday.

Sounds like a good plan Sorce.  It seems to have better smoke flavor after being pulled, chilled and then reheated.

I got a 8.5 pound butt for the weekend along with some Flinstone ribs (large rack of Spare ribs), and a couple racks of Baby Backs.  Already drooling.

Don't forget to FTC that butt.  It really makes a difference.

Yep, had a lot left over from wife's graduation party a couple weekends ago. And that's not even what I'm enjoying, I'm 4 Manhattans deep right now, just finished my smoke, replaced the water, rotated the racks and am good for the night.


I've got the beer (Sam Adams Summer), that means 5 delicious beers left for me, in a pan on the bottom rack. I went ahead and put my maverick probes in.

Good news, my wife neglected to tell me I had a delivery today and it was in the office. I got my bear paws. Here I was thinking I would have to use forks to pull these...

The butts are looking great. Cant wait to see the final product. Being a newbie myself, I have smoked just a few butts and I just smoked my first brisket last night. Now you are making me want to go to the butcher shop and pick up some butts.

I read about the pork puller KyNola is talking about in TenPoint5's newsletter, which you should definitely subscribe to. I think you can just PM him and he will add you to the list. The porkpuller works great but seems to be a bit pricey. If you have a lower budget like mine try the Bear Paws Meat Handlers / Lifters. I have a pair and use them all the time.

First little piggy hit 195, camera was dead so no pictures until they emerge from FTC. I figured I would move it with my bear paws like on the picture for the bear paws. Started to try and the but started to fall apart so I just used pot holders and the aluminum foil. The other one seems to be about 8 degrees behind since they came out of their stall so it should be along pretty soon.
