I just not a fan of cream cheese, blue cheese or ranch dressing, but I do like meat!

I'm not either, but when you put it in things, I've gotten over it.

I am so making this for this weekend.

I have made that dip before and its excellent and your guests will like it.  I just haven't used smoked chicken, I usually grill it....
Is it bad if my wife refers to the smoker as "The Mistress"?

This is good stuff, I make Buffalo Chicken Dip all the time. Often I will use some leftover pulled pork, or other smoked meat instead of chicken.

Rick;
When I get around to it I will post your recipe on the recipe site.

Do yourself a favor, make a double batch!

I mixed it up and put it in the fridge for a few hours before I baked it.

Too late! Chicken seemed to cook in about hour. IT only said 140 but it was white all thru and juices were clear.  Baking with the cheese is the backup plan. Pretty tasty already! I did put a little rub on the meat before putting in the smoker. Can wait to try it tomorrow!! Will post photos tomorrow. Am also making some moink balls, abt's,  some ribs and a whole turkey (my first turkey). ;D

KyNola

Duncan, trust me that chicken's not done!  Don't know what you're measuring temp with but that chicken is seriously not done!

One hour and temp is 140?  Not only no but hel! no.

Unless I'm totally misreading your post, don't think about serving that.

I apologize if I am missing something.

duncanshannon

well, it might have been 1hr and 20 minutes... I did pound it out a little, so it was pretty uniformly 3/4" thick. It was a nice white inside, no pink at all. isn't that a good indication?

KyNola

I stand corrected.  If you pounded it thin, it probably is cooked through.  My apologies to you for sounding the alarm.

Just a note to say thanks, because my wife is making this buffalo chicken dip again today.  Good stuff.
It may seem like I'm rubbing salt in the wound, but the truth is I'm trying to cure it.
