Stuffing my face on Independence Day

So I FTCed my butt for around 7 hours and popped it into the oven at 350 until it hit an IT of 140.  When I pulled it the thing pretty much just fell to pieces.  It melted in my mouth.  Soooo good.



and then came the 3 racks of baby backs.  They were really good, but I had some weird temp stuff going on so some uneven cooking went on.  So it goes.



So that's my independence day pork worship.  I'm stuffed and exhausted.
