Hey guys and gals,
I'm gonna make some bacon wrapped (boneless, skinless) chicken thighs this weekend.  I'd like to stuff them.  I have a few ideas but I'd like to hear if you guys have any recommendations.
A few ideas I have
- Mushroom/onion mix
- Stove top stuffing
- onions & peppers
- cream cheese and???
- more bacon?

I'm sure you guys have done this before so let me hear what worked for you.
Cheers!

Did some not too long ago with slice jalapeno, onion slice, stick cheese (it has a high heat melt level)

Did some rub with those. Was pretty good.

But this is almost like a Fattie. If it sounds good, it probably will be.

Think I would leave out too much dry stuff on inside of the thighs. (onion mix, stove top stuffing)

Chicken fatty?  Interesting.
I've got the Costco size pack of thighs and bacon.  We're only having a couple friends over so I'm sure I'll be eating left over for a long time.  I"d like to maybe try 2 or 3 different stuffings.  anymore ideas?

broccoli & cheese
maybe some cranberry sauce in with the stuffing or mixed with the cream cheese

You could always add to them AFTER the cook too...
Maybe drizzle with lime juice and top with pico de gallo?

Chopped sour apples, sliced almonds and more bacon.  Maybe with a little balsamic vinegar too.  Just enough to give it some kick.

I don't drool at my keyboard too often but there's something absolutely poetic about that concept.
