The bacon in the middle was just pan fried.  I started with 2 pounds of unsmoked thick cut bacon.  I end up using about a pound and a quarter to make the weave.  The rest of it, I just chunked up and tossed in a frying pan quick.  I just stirred it around till it started to brown up a little, and then spread it out over the Italian sausage.
