I am going fishing in a couple of weeks and need some recipies for smoking fresh fish,  white bass, and  walleye.    Brine,  and smoking technics would be great. Thanks for all of the great advice guys.

Bass, OK, but why would you want to ruin the God-given wonderful taste of walleye with anything other than a little butter, salt & pepper?

Ya think next time I check into a hotel & they ask "Smoking or Non?" they would mind?

I don't know,  Just asking.  Father in law wants some smoked fish and this is the perfect oppourtunity for this.  we will be catching these fresh out of the lake over the 4th weekend and I need to know what to do with the white bass once it is cought and cleaned.  Brine or what.  Thanks for the help.

I've never tried smoked walleye- they aren't an oily fish and apparently aren't natural "smokers". I've tried smoked pike- and it was OK- again pike aren't naturally oily and was a bit dry.

I usually keep the walleye fillets for the pan. I have some TOP SECRET special spice for my walleye [;)][:p] but like Kirk mentioned- you can't go wrong with BSP (butter, salt & pepper). I usually dust in some flour first.

Good luck fishing!
