I've got some frozen salmon that I'd like to smoke this weekend. Would it be ok to put it in a liquid brine while it's still frozen and let it defrost in the brine?  I'm thinking I could put in the brine on Friday night after work.  Hopefully it would be defrosted by saturday.  Remove from brine and let dry.  Smoke it on Sunday.  Eat yummy salmon every day next week.  Is this a bad idea?  Anyone tried this before?

I've done that a few times when I decided last minute that I didn't have enough fish already in the brine. Better than defrosting in the microwave. The fish defrosts quickly.

However, the simplest way is to put the frozen fish in a pot in the sink and let a trickle of cold water run into the pot. It will be defrosted in no time.

I've also done it Smokeville's way and had good results......

I think I'll brine tomorrow morning and smoke on Sunday.
Thanks guys.
