I have a pork shoulder that I just pulled out of the freezer and will defrost overnight. I have to get it in the smoker in the morning. Would it be ok to apply the rub tonight while it's still frozen or maybe get up in the middle of the night when it's partially defrosted? I would think applying the rub while frozen would be ok and as it thaws the rub will do its thing.

Personally, and I'm sure others will have a different say,

but I would wait to rub it in the morning while the smoker is warming up.

It will still be great!

I kind of did both. Thawed for about five hours so the outer meat was not frozen. Applied rub and went to bed. Applied another coat of rub this morning and now putting into the smoker

That works!
