Salmon, which side up?

I am going to smoke some salmon. Should the skin be up or down?

well i am going to throw a twist in the mix. Skin up. if you are trying to do big whole tail fillets, i would use the stainles racks , sprayed with pam, and skin up, freeze your fish first then soak in brine then smoke you will get a better product trust me. if you are doing small chunks remove the skin and use the non-sticke racks sprayed with pam , when you leave the skin on and smoke big fillets, it will take longer becuase the oil cant drip threw the skin and the skin will come loose, if you need more info let me know. i must get back to unloading the RV i just rolled back in town from a long salmon fishing vac.

Actually, I've evolved to removing the skin prior to smoking for one simple reason....I get cure/smoke/great taste on ALL sides of each piece this way. (Kinda like having muffin top taste/texture for the WHOLE muffin!) No muss, no fuss....just pop the pieces in your mouth and chew[:p][:p][:p]! (Except farmed salmon....make that chew & chew & chew & chew & spit[;)][}:)][:D])
