tri tip?

i dont think i have ever seen a meat labeled a tri tip. from the posts it looks so good. is it called something else here in wisconsin. thanks

Pat that is really aggravating, they grow cows without the tri tip in Wisconsin and cows without the brisket in Jordan. Genetics I guess.

I was reading an article, and it pointed out that briskets, and tri-tip are fairly small cuts, and there are only two per cow. There are only a few ways they can be sold, so most stores don't want to deal with them. It also stated tri-tip is now generally ground, but may become more available since there is a growing interest.

The other cuts (also generally two per cow) are much larger and more versatile. For example you can take a top loin or shoulder, and butcher it into many different cuts.
