Memorial Weekend Candi Salmon

Well now the Copper River Salmon is coming down in price I thought I would make some "Candi Salmon", started off with a couple of 5 lb Sockeye and brined them last night and now air drying them with the help of a fan here area couple of pics more to follow when done!






2 1/2 hours of Air/Fan drying ready for the smoker  Racked and Loaded

Natural Gas 4 burner stainless RED with auto-clean
2 TBEs(1 natural gas & 1 LP gas)
OBS(Auberins dual probe PID, 900w finned element & convection fan mods)
2011 Memphis Select Pellet Smoker
BBQ Grillware vertical smoker(oven thermostat installed & converted to natural gas)

Darned if they don't look really good in that smoker, that's a pretty picture...Yummm.

What is the secret to keeping the salmon from sticking to the rack, I just finished an 8 hr smoke, the salmon came out great but I had to carefully scrape it off the racks.
Any suggestions would be appreciated.

I use non stick spray on my rack first that seems to help a lot

Order you some Frogmats from Yard and Pool.  A trusted member of this site.  Frogmats are high temp screens cut to fit your Bradley racks.  Much smaller mesh, will withstand 500 degree temps and nothing sticks. I have some for all 8 of my racks.  You won't regret it.

The frogmats are nice, but for salmon all i use is some non-stick spray and they never stick.

Looks awesome, I'm doing some this weekend. I am trying to figure out how you turn your dishwasher on, there is no control panel ???

@ Keymaster, the controls are on the top of the door. you set the wash up before you close the door, shut it and it starts. I have the same on in black.
