Did up some legs

This is a first for me. I always use the legs for soup.  ::)

But with every one cookin up some good lookin legs I had to try it.



Marinated in some of this.





Then hung to dry for a couple hr.





Smoked for 2 hr with Apple.



In TBE till the IT was 165 F



Wasnt bad.  ;D

I will cook them a little longer next time,,,, still a little to greasy for me.  ;D

Made up some coleslaw too, did a big change on the recipe I've been using.

NOW I have the coleslaw that is the way I like it.

Those loke great! I have found that when using the TBE with the leg racks I tend now to watch the color of the skin more than the IT...I have thought they were overcooked before but always have turned out moist and juicy ;D

I thought they could have cooked longer by just looking at them.

This was my first time cooking legs for the main course,,,,,, didnt want to over cook them.  ;D

So what kind of soup you making with the legs?
Is it bad if my wife refers to the smoker as "The Mistress"?

Great looking legs OU812.  Like the use of the basket in the Bradley and then the TBE.

Noticed you took your legs to 165º - That's the temp I take my breasts to but I take my dark meat to 180º.  Were the legs done at 165º.

They were done at 165 but still a little on the greasy side.

Gonna take them up to 175 next time.

I cook breasts to 160.

The only thing better than chicken legs in TBE is chicken legs with mies breading on them!

I tried the Mies in TBE and they didnt turn out verry good, didnt brown or get that crispy.

I think I posted that too.
