My wife and I finished jarring 40 pints of pickles, from start to finish the process take 14 days if anyone is interested I will post the recipe...

             14 Day Sweet  Pickles

Mix 1 gallon of water and 1 Pint salt for ever
2 gallons of pickles. This can be done in a crock
large kettle. Does not have to be refrigated
Stir one time every day for 6 days.

7th day pour off salt brine. then add 1 gallon
of boiling water with one tablespoon of ALUM, for
    each 2 gallon of pickles.

8th day repeat. pour off the liquid. then add
1 gallon boiling water with 1 tablespoon of Alum.
for each 2 gallon of pickles.

9th day pour of the liquid. Cut pickles lengthwise.
then add 5 pints of boiling vinegar, with 6 cups
of sugar desolved in it, and 1 jar of McCormicks
mixed pickling spice, this is a 1.5oz jar for every
    2 gallon of pickles.

10th day pour off the liquid into a spare kettle
add 1 1/2 cups of sugar for every gallon of mix,
bring this to a boil and pour over the pickles.

    11th day...repeat the 10th
    12th day...repeat the 10th
    13th day...repeat the 10th

14th day pour off the liquid into a spare kettle.
pack the pickles into your jars. bring the liquid
to a boil and pour over the pickles in the jars
    Seal the jars...

Pickles are never cooked, they are cured in
    the brine...

Quick question... on days 11,12 and 13, are you adding a cup and a half of sugar each day? Also, do you need to add any liquid to make up for evaporation, etc?

Thanks, Randy

Randy... on the 11 12 and 13 you are adding 1 1/2 cups of sugar just like on the 10th and no you do not add water because of evaporation..you are adding more sugar everyone of these days..

Ghost,

We used to do these all the time when I was a kid. Just got my dad's old crocks, and just waiting for retirement to do em.  One question.  My parents always used lump Alum, instead of the powder. But I can't find that for the life of me anywhere. Which are you using.
