It did cause the magnet seal on the cold smoke adaptor door to sag a little, but

I had to know what would happen if I tried it.

Here's the meat after about 4 hours.

The Brisket was put on at 11 and it was done at 5. 6 hours?



The shoulder roast was finished by 4.



All are in FTC.

Pretty sneaky with the wood. I envisioned you on the back porch with your pocket knife whittlin' bisquettes ;)  What were the pertinents on the brisket? 5.6 hours seems pretty speedy. Bet it tastes as good as it looks :D

Wish I knew what a "pertinents" was.

I was surprised at the 6 hour cook time myself. I must stabbed that Brisket 10

times with my Thermopen. If it wasn't dead, it is now.

Sorry about the mis-use of the word. Webster's student Dictionary defines pertinent as "having to do with the matter being thought about or discussed."  I read a lot and I tend to slip new words into conversations that sometimes aren't pertinent ;D  See what I just did there? ;D

You have to love a chat site where you can actually gain weight just by looking at pictures....I always log on just to see what's happening and leave frickin starving after 10 minutes.  I need to go for a walk :)
