Cajun Jerky

Gotta use of some freezer meat.

Some trim to do.


All trimmed pretty good.



Got my cajun marinade ready to mix.



This is what yer looking for. Now let this sit for 30 mins before adding strips.



Strips added and covered, now in the fridge until tomorrow.

Got a late start this morning and just got CJ racked.


Going with some smoke from my ASNPS with hickory/pecan mix.

bag that up and send it to me for evidence.

I did notice you didn't share that recipe.

Lose some weight out of that Vault. ;D

Jeebus Cajun Jerky  :o

5 lbs strips
3 Tbs non iodized salt
1 tsp cure #1
2 tsp garlic powder
2 tsp onion powder
2 tsp cayenne
2 tsp crushed red pepper flakes
2 tsp black pepper
1 tsp ground thyme
1 tsp rubbed oregano
1 cup worcestershire sauce
4 cups cold water

Mix everything into the liquids and marinade overnight. Smoke your desired way or dehydrate.

The nice Guy that I am I will drive to NEPA when you get ready to move

and pick up your Vault for you and take it to Texas,

opps I mean Georgia for ya. ;D

I like this one. Almost exactly what i used except I would have never thought of thyme. I used slap yo mama seasoning instead of my usual tony chacheres. less salty. I did my first batch ever 2 months ago. I am liking the looks of yours better. Gonna try again this weekend.
