I had a Dream! Chimichanga Poppers!

This actually came from a dream after a nite of stuffing myself with Mexican Food.

I have never seen this anywhere and if someone has done these, I apologize.

Here's what I have done with it so far.

Took Mexican rice and refried beans and mixed them together.

You will need about 3/1 ratio of rice to beans so that it won't be too gooey.

After mixing that up, I took a teaspoon and spooned a glob onto a plate.

Stuck that in the freezer for a bit and then roll that mixture in the palms of

my hand to form a ball.



Next I set up a assembly line of flour, beaten egg, and panko bread crumbs.

Flour first, then egg wash and then a tumble in the panko.

Into a deep fryer till the outside crust is the color you like.

I did it three different ways.

Just rice and beans: they were ok, just not my favorite.



Here's some with just a flour batter. Was OK, but I didn't season the batter

as I really didn't know what was gonna happen or if it was worth the effort.



Here's some with chopped Jalapenos. So far my favorite.

Some after thoughts on my first try at this:

Don't get too big on making your balls (if it to be a finger food)cause all

that is holding this together is the outside crust.

If you use adobo to season the panko, don't get crazy with it cause it

turns pretty salty. I threw away my first cup of panko and just went with

pepper, no salt.

You could make up a bunch of these and set them in to freezer and after

freezing they could be bagged for frying later.

Well it surely does look good, and they don't look like they would be hard to put together...

Looks good and bet they taste good. Might be interesting to shape in a cone and put in a pepper of some sort. Just thinking out loud. Will be sure to try them this way.

You got me thinking...  WHAT IF (here, hold my beer!)...
What if you mixed the rice, beans, and jalapenos --- something like 1/2 and 1/2 with corn muffin mix?  All mixed together?
Be kinda like a souxed-up hush-puppy or a fritter?
