What is the best IT for boneless leg of lamb?

Wildcat

Well done     = 170 F
Medium        = 160 F
Medium Rare = 145 F
I like mine at 150 to 155. Most on here probably like 135 to 145.

For lamb I like it around 135° - 140°. That is what I consider medium rare.

thanks!  I pulled and FTC at 145 and it was prob med rare.  Perfectly cooked!  I dont think I will smoke another lamb though....not a huge fan of lamb that way.  it was ok, but rather smoke a pork butt!

I with ya on that. For what it cost for Lamb, I can have several

Big Butts.

I rarely smoke lamb. When I do I use about an hour of apple smoke.

I'm surprised you didn't like it. I don't smoke lamb much, ususally when it goes on sale; but it always comes out good. I generally season it with a lot of garlic and rosemary, use hickory or pecan, and take to around 135°F.
