Did my 1st smoke using the PID. That was an experience. Have to read the instructions a couple more times, but like the controller.

Did country style boneless ribs with homemade Jamacin Jerk rub. 2 hours of Oak. 4 hours total at 200 degrees.

Tasted great, even better the next day.

Served up with wife's spicy rice bake dish and mother-in-laws sweet corn.

Looks really good.  I like them boneless ribs - quick easy and tasty.  And that rice dish caught my eye also!

Nice.  I also made up some country style a couple weeks  back.   I let em sit in some Carolina Treet for a couple hours and then smoked with pecan.   Wife loved em.
It was also one of my first time using the pid.  Check out Gus' pid pictorial.  Very easy to follow.   Sorry, no link.

I love smoking those too.  Just took some with me last sunday to watch the Bears beat the Vikings.

Thanks everyone! My wife gets them alot cause they're reasonably priced, so I have to come up with new ways to make them. And Keymaster, yes my wife does share recipes and so do I. If you're interested in the rice dish let me know. I might post it in the non=smoking recipe section if there is enough interest. It's really good.

Are blatant forms of asking if Momma would be kind enough to share her recipe with the family. I wouldn't mind seeing the Jamaican Jerk recipe myself

Ok, I got the hint. I'll post the recipe for the rice dish in the non-smoked recipe section under Dish of Fire and the rub in the rub section. I'll have to do it tomorrow,' cause the hands can't take anymore today. Hard day at work. I'll have plenty of time while I'm making my 1st attempt at smoking Kummock's salmon recipe tomorrow.

These look great! Can you give me specifics on how you did these? Seems like when I do them they turn out really dry. I did the 3-2-1 method like normal ribs, chances are this is my problem. These look very moist and tender!  Did you Foil them? Rotate racks?  Does it make a difference on how many pounds you do as to the time and temperature? Thanks!
