year old frozen salmon

I guess its freezer cleanout season  as 3 people so far have offered me their year old Fraser river Sockeye to smoke.The first lot was lightly wrapped in saran wrap and a large plastic bag. They were so badly freezer burned they went in the garbage . The second lot was vacuum  packed and kept and smoked well  The last bunch are curing in the fridge now. They were wrapped in a double layer of heavy duty alum foil and kept nicely.They'll go in the obs tomorrow. All in all about 8 lbs of free salmon and 6lbs of throw aways, not bad.
