Saturday Brisket and Ribs

wife is having a friend and her "serious" boyfriend over for drinks and dinner tonight.

we are cooking the fun stuff!

this was seasoned and vac sealed about 2 weeks ago maybe


out of the seal


ribs just done about 1 hour prior to cook time


still running a bit HOT


but my smoke is sooo thin and blue......


ribs ready to go boating


remind me to not forget the finished product!

Okay, you have a great start, looks good.  Just your reminder, where are the finished pics?  I like your stick burner.  I have a old New Braunfels that I really like and get some good cooks with, especially when there are more than two to cook for.

about this time into the cook things were getting a bit fuzzy, as you may gather from the quality of the pic.

totally forgot the brisket, but lets just say this wasn't the best cook i've ever done. 

i ultimately tried to go hot and fast to long, the brisket never hit a stall, and the ribs were a bit dry.  rib flavor was decent, but not my best.

to this day i don't know what i was thinking with trying to go hot and fast.

Been there, done that!

Now I set allarms to when things should be done, if not done then reset the allarms and go back to enjoyin myself.  ;D

Everyone around here knows that when an allarm goes off its time to get back to the smoker.  ;)

You might look at getting a Pitmaster IQ for that thing.  It would help control the temps.

i've actually considered looking into one of those.

truth is i kind of purposely kept rolling the high temp.  i knew i needed to cool it off, but as usual got a later start on building the fire than intended....

Squirt is right, a tempcontroler would be a big help.  I have one on my old "New Braunfels" it works great. I have the Auber Instr. controler.



I made a plate to adapt the fan to fit the air vent, was real simple.

 

Here is the controler, I had the temp set for 240*, and then here is the finished product.
