First Butt is in the Bradley.

I have had an 8lb butt in the 4 rack for about 40 minutes.  I am leaving to do some running around.  Can I set the temp on the Bradley and forget it or do I need to watch the Maverick until I get it right?

Your 8lbs. butt is going to take around 12 hours so I would set it and forget it if the stuff you need to do is important.

Ditto.
To add-- take advantage of your maverick's features. I like to set the low and high alarms for the cabinet especially. Never now when something might happen. Usually I set the high alarm on the meat so I know when to take it out.
That's just me. Good luck and post some dam pics. :D

I do my butts  at 225*. The 8 pounders have taken anywhere from 16-22 hours (not including FTC time). While I consider the Bradley as "set and forget", I limit that to while I or someone else is at home. I may be over cautious as I also don't leave the dishwasher, oven, or dryer on when no one is home. I have seen/heard about too many fires to take a chance.

I leave home with mine, but I make sure that it is far enough away from anything else to be safe in the event it did catch on fire.

Well I was up and running at 12:20 yesterday with an 8lb butt in the smoker.  Temps slowly crashed to around 15 degrees last night and the smoker had a hard time hanging on.  It dropped to around 209 throughout most of the night.  Though my Maverick was reading higher.  I hit 190 at 7:40 this morning.  It's FTC'd and im ready for some football.  I hope that 19 hrs in the smoker didn't make it dry.  I really wanted to post picks of this slab of pork but I dropped my damn phone in the toilet last night.  It's currently marinating in a bag of rice.  Gonna whip up some vinegar based dipping sauce and hope for the best.

Butt should be fine. Never had one

I am sure you will be fine. Keep it in the foil for at least 3 hours to let the juices soak back in to the meat.
