Smoked wings

Finally got around to doing some smoked wings. Smoked for 2 hours with Jim Beam pucks. Pulled after 2 1/2 hrs and put on grill to crisp skin. Doing three flavors: teriaky, louisiana honey mustard wing sauce, and the old faithful texas pete. I tried one prior to saucing, and WOW!

Since you said they were "WOW" before the sauce...
Here's a great way to do them "sauceless"...

Mix 1/2 and 1/2: Lawry's lemon pepper and a your favorite cajun seasoning.
(don't substitute cheap lemon pepper.  Lawry's uses more lemon peel and less citric acid -- makes a huge difference).

Rub em down and smoke em (or grill) and finish on the grill.
Right before you platter 'em up, squeeze the juice of a fresh lime all over em.
Toss some lime wedges on top of the wing pile for garnish (and extra squeezing if anyone wants)
Simple and very good.

This is also a fantastic way to do jumbo shrimp (on the grill -- all the way)
