AC 116/Beer/Jap Sticks

Got 5 lbs of AC 116/Beer & Jalapeno sticks going today. Heading to FL on the 13th.

Forgot to put the Jalapeno powder in the pic.



Put the mix in the fridge last night.



Remixed this morning and stuffed.



6 rack with hickory going soon.

Same here. I have a nice camera with all the fancy settings and stuff but I can't take good pics with it. It's all that shutter, apperture, iso settings and .... :) you know. The small round dial in mine with the different modes works somewhat. It's just so much easier for me to take a pic with my phone and upload it on the spot. Even though the pics are carpy sometimes at least their there to look at. ;D

I wasn't sure what "Jap Sticks" were....glad to see they're the abbreviation for JalapeƱos

Here are the stix after 2 days in my experiment mode.

Real happy on how they got darker.





Shrinkage guessing was about 30%




The process really brought out the tang of the ECA. My wife said really good like store bought slim jims except without all the greasy oozing fat.

Got them cut to 3" lengths and vac sealed.



I put them in my dehydrator @80*
