Fattie, ABTs, and Yard Bird Legs

So I made a fattie a few days ago and decided to make another with a different  filling. All in one meal for me ;)

1lb each of 80/20 GB and Owens sausage rolled out  and ready


Topped with rice, cheese and broccoli casserole. Also put a few canned jalapeƱos for a Lil more flavor. Sprinkled with some Zacks grilling spice


The wrap. Bacon weave. Thanks OU812.




The ABTs and yard bird legs. Filling for ABTs was italian sausage, cream cheese, Monterrey, jack, and cheddar, green onions. All mixed up and piled on to each half of the jalapeƱo. Them wrapped in bacon. Sprinkled with some Super Pig.
Legs seasoned with Zacks grilling spice.

Mike great job! It all looks awesome!

But you forgot to pull the skin back on the legs and wrap them in bacon too ;)

It all looks awesome! I'll bet the fattie dripped a lot of fat while you smoked it. How long did you leave it in? How can you tell when it was done?

The one I made a few days ago took 3 hrs. But it was stuffed only with some cheese.
This one took right at 3 1/2 hours at 250F with 2 hrs of maple. I set the PID to shut off at IT of 165F. I had a maverick and PID probe in it to monitor the temp. When it came to temp, the maverick sounded alarm and when I walked outside, the PID started beeping and showing END in the display. Was just perfect.
