Boneless short ribs

The "Whole Foods" next to me sells boneless short ribs, so with nothing else to do today I picked up a couple pounds along with a couple filets, and corn on the cob.

I simply rubbed them in salt & pepper and a touch of McCormicks Montreal seasoning.
3 hours of Jim beam smoke at 220*, one hour boated w/ apple juice, one additional hour out of the boat, then a quick sear on the grille.

Thanks gents! Was initially intimidated by stories of this cut ending up dry or tough. I think boating made all the difference.
I rendered down the juices from boating and added a little soy sauce, honey and tobasco and brushed them down just before hitting the sear station. Just explaining the sheen.
I will definately be doing these again.
