Nothing fancy. Sometimes simple works.
Some bird legs and poke chops. Arroz con gandules, guineos (green bananas) ala escabeche.
Something to look at.

Thanks for looking :)

Rice with pigeon peas. No, they dont taste anything like peas  ;D.
The rice is made with olive oil, oregano, tomato sauce, sazon goya, adobo (not the sauce) and sofrito. Not the stuff you get at the store. This is home made from onions, garlic, bell peppers and cilantro. All put in a blender until smooth. Sorry there are no measurements, my wife learned how to make it from my mom. I just called her and she said there are no measurements, if someone wants to learn, they can come watch me  .
There is also a certain way you cook it. You have to cook the sofrito in the tomato sauce first and then go from there. Sorry Im not much help with this, its one of those things passed down from way back.

The onion, green pepper, garlic is basically the sofrito minus the cilantro we put in ours.
This is a general recipe for it. There are many recipes I'm sure depending on who is making it. The olive oil gives it a nice sheen and moistness that this recipe doesn't show.

I see pigeon peas in the store now, next to the Garbanzo beans.

And yes, you are making me hungry as well......

Lol. That's one thing I've never liked for some reason. Since I was a kid. My dad would had to force us kids. Wasn't hard for him either ;D.
His favorite one was that we were to sit there till we ate all our food. Nothing else was gonna be cooked. :o
