Up In Smoke

A friend made a request for a special smoke.

So lets get started.
Turkey, apple juice and some jalapeno
Sausage.

Turkey lightly sprinkled with s&p
Then wrapped in cheesecloth.

Then soaked with apple juice and ready for the smoker.
1.5 hrs of hickory.
more later!

Obvious question -- but that IS a bone-less turkey breast right?!?! Or did birds in your region lose their legs and wings? :)

You can vacuum seal and freeze the slices.   That's what we do.

I also take the skin off so I get a little more smoke/rub penetration.   Doesn't dry out the boulders at all.

this is my favorite way to do the little boulders.
the big boulder will probably go into tswsnbn.
do you get yours from rest. depot? or is there another place i can find them?

Yes, RD has them from time to time.

I can also order them from Gordon Food Service here in Springfield.
Not sure if they have them out there or not..   "GFS Marketplace" is what their stores are called.
