Couple of questions.....

Hey guys, I was watching BBQ Pitmasters last night and they were playing with pig! Couple questions from what I saw. First concrns the rub, I normally apply the molasses then the dry rub, but they applied the rub then slathered it with mustard. Would applying  the slather last make a big difference? The second question is about injecting. Do any of you inject anything? If so what goes for brisket and what for butts?

I don't inject butts but I know lots of folks inject them with apple juice.  I have been known to inject a brisket or two ;) and when I do it is with "No sodium added" beef stock.

As for the slather first vs rub first I don't think it makes a lot of difference.  I slather first but only because that's the way I've always done it.

I've done it (with pork butts) both ways, and I really didn't notice any difference either.   Just more prep time, and an extra mess to clean up.

i also like to inject whole chickens with a butter creole marinade, and then give them a light rub under the skin.

I always paint then dust. Just how I do it. I dont really inject anything anymore. I did one time inject some yard bird thighs with Carolina Treet and they were awesome. Kinda like that gum I used to have when I was little where you bit into it and it had that pocket of liquid goodness inside of it.  ;D

Thanx for the advice, I slathered then dusted my last butts and really liked the way they came out, do Ill probably stick with it.
