Welcome aboard BOUTCH.  Only word that really needs correcting is smock.  The correct word is smoke ;D.  This link is a good one to read about beef ribs.

Cooking times will vary by amount cooked and temperature of your smoker but I would plan 5-7 hours if you cook them at 225°f I think thats 108°c
Some people say BBQ is in the blood, if thats true my blood must be BBQ sauce.

BOUTCH

which one is better beef or pork ???

BigSmoker

I personally prefer pork but have done some nice beef ribs in the past too ;D.

Welcome Boutch. Try the pork for the fist go around then try the beef next. Variety is the spice of life as they say. Whatever you do HAVE FUN and enjoy your time playing with the smoker. Hope we see you often here. Take care. :)
