Mikes Dead Deer Kielbasa

Made some Kielbasa yesterday. Let it rest in the fridge over night as I did not have the time to smoke it last night.
Going with a hickory and Jack Daniels blend on the pellets.
I have the  A-MAZE-N-PELLET-SMOKER going with the smoke daddy, letting everyone play today   ;D


Deer meets pork  6lbs of each. Getting mixed with all the fine spices.


All done putting them into coil's


Just gone in for some smoke

A friend of mine hunts around Dryden Ontario up at his brothers place. We both live in Thunder Bay a couple of hundred miles away so he marks his packages with DD on it to show where that deer meat came from. I was teasing him about the DD and asked if it stood for "DEAD DEER" and just went with the theme  ;)

 Here is an update on the Kielbasa. It has a ways to go before it reaches 152°F.

OK all done and blooming. Man it got cold out.


Ok here they are, wish you guys could scratch and sniff. These are so good to smell and will be better to eat.  ;)

LOL   I do like the chopper out of that set. Just be carefull of the flexing on the others as you could slice off a fingure or two  :o
