Northern Rings

Lat week i was up in NEPA because my neighbors son died. They are having a rough time so we are making a surprise trip up this week. He likes ring bologna.

I got 30 lbs to make.

Thanks viper. Supposed to snow a tad while we are up there.....brrrrr

Well can't do much about the snow. But if you take a couple boxes of Ritz crackers and a few lbs of cheese and a bottle of hot sauce you'll be able to hold out a while.  ::)

Oh i dont know, never bother to weigh smoked sausage (only dry cure sausage)

This is a 5 lb batch and i stuff pretty tight.  Cooling now.

About right. My smaller ones are roughly 1 1/4 and the ones I just made about 1 1/2 lbs. Man that really looks good. Were is the Swiss?
Also that part of ring always goes into a few 1/4 lb or so patties to fry and eat. Simmer slow and their great too!

Gosh they look good!  Would be nice to have a taste right about now!  You're a good friend to bring up something to a friend in distress.  I'm sure being there for him and his wife will mean a lot to them.

Only took a couple hours to grind mix and stuff 10 lbs. 30 wouldnt be much longer. And if a person wants it quicker smoke a couple hours if you smoke them some dont. THen water bath.

With a Kirby Water stuffer it only takes about 20 minutes and most of that is putting the stuffer together and filling it

Yep ! I bet so! But for some of us we can only dream!  ;) Will get one as soon as I can! If it works as good as your mixer I could go in business! LOL!

Got the ring casings off clean.



Cut them in half and vac seal this way all the norther hunting buddies can get some.
