Jalapeno/Cheese SS Sticks

Doing 2.5 lbs of 90/10 GB Jap-n-Cheese SS Sticks

Cuber for the cheese makes 1/8 x 1/8" cubes



Little over 1/4 cup



Going with LEM mix.



Here are the two choppers. They are made by Genius. Google you can find them. If you have a Kitchen collection outlet they have the choppers.

The 1/4 x 1/4 i have had for bout 5 years. The canisters on both just rotate out from the tabs.

Blades are fixed, You just push down to cube.




You can take the plate out by pulling the 2 locks together as shown. This is the 1/4 plate







Here is the 1/8"
The plate and blades stay fixed, you pull an insert from the bottom.






Stuffed and smoked

What do you do with the extra mix since you don't make the called for amount?  I am have some 25lbs batch packages that i was going to just use what i needed and then vacuum seal the rest in a small bag.  That looks like it says its for a 25lbs mix also

I put it in ziplock plastic container with the screw on lid. Found that between 6-7 T mix is good for 5lbs of sticks for my taste. You may want to start at 5 T then taste. Easier to add more than to take out.

If you want to check out the kitchen collection store it right in the same mall as the Indian store with all the spice stuff.

I gots me one of them cheese deals.  Looking at you temps for today you should be smoking cheese today beings its only 60 degrees out. Its 37 and falling here so I stuck 5 pounds in.
