Felt like some ABT's tonight

Been awhile since I made ABT's so when I was in town I found some really nice ones. Most around here are very small. So I bought ten and the way I do them I cut them length ways and fill them full of cream cheese and sausage meat so it still looks like a whole pepper after its wrapped with bacon. Once they are wrapped I sprinkle extreme hot jans rub on them. I call it butt burner rub :)

Hey Devo, do you mind posting what temp you smoked them at and how long it took you?

Does the bacon turn out crispy in the smoker? or does it come out rubbery like chicken skin does?

This batch I set the temp to 250°F and they took almost 4 1/2 hours.
The bacon is nice and crisp, not real crispy but no where near like chicken skin in the bradley. Since Most times I just make them and reheat them the next day for a snack and the bacon is very easy to chew through, but than again when is bacon never good  ;D

When I do them I just crank the heat all the way and do a 1.5 to 2 hrs of smoke and bacon crisps up.  If it is winter time, after smoke is done and cabinet temp is not hot enough to crisp bacon I put in oven on broil and crisp the bacon real quick.  These are real easy to do and certain crowd pleasers

Been a long time since I had any of those and after seeing your pics, I will get the wife to pic up some ingredients when she goes to town tomorrow. Good thing she's going anyways, or I'd have to make a special trip. ;D
