Been waiting to cut into those chubs for awhile and today was the day

End pieces cooked up. Man was it good. I found it a bit on the sweet side with a tang. Hard to describe but yes it was a winner in my books.

I love Lebanon Bologna but I always get the regular the sweet it too sweet for me, cause I'm already sweet enough.  :o
I have never fried it, I always put it in my lunch on a sandwich with some brown mustard. Mmmmm  :)

Yes I have to agree about the sweet is just a little to much. I do find adding mustard knocks it down a notch but I do think my next batch will be just regular bologna. Friends I have given some to try have mixed reviews so I guess its a matter of taste.

Around this part of PA I would say its a 50/50 split as to which is better, me I like the regular Lebanon Bologna over the sweet one. But as you say, its a matter of taste. They now have a sweet double smoked. But since its sweet I have not tried it. I probably eat it in my lunch 3 times a week. :)
